Zucchini Tomato Casserole

- zucchini, sliced (peeling optional)
- onion, sliced
- minute rice, white or brown
- tomato, sliced
- cheese, shredded any kind you choose
1There are no amounts to this recipe. In a pan put a layer of zucchini, onion, a thin layer of instant rice, and tomato. Repeat. Top with cheese and then bacon. Bake for 1 1/2 hours at 325 degrees. Cover the first hour. Uncover the last half hour to crisp up the bacon.
