ZUCCHINI SQUASH RELISH

I was brought up with a grandfather who had lots & lots of vegetable gardens....

This is a recipe he made a lot.

Ingredients

10 c
zucchini, grated
4 c
onions, chopped fine
5 Tbsp
salt
2 1/4 c
vinegar
1 Tbsp
nutmeg
1 Tbsp
dry mustard
1/2 tsp
pepper
1 Tbsp
celery seed
1
red pepper, grated (seeded)
1 Tbsp
tumeric
1
green pepper, grated (seeded)

Step-By-Step

1Combine first 3 ingredients & let stand overnight.

Next morning - Drain & rinse in cold water.
2Place in large pan the first 3 ingredients that were just drained; combine with that the remaining ingredients.

Cook for 30 minutes.
3Place in 6 sterilized pint size jars & seal.

Let age 2 to 3 weeks before using.
