Another great way to use up some of that delicious zucchini in your garden. This is a recipe I created a long time ago, that the family has always enjoyed. I hope you enjoy it too. Its also great with some browned sausage.

Ingredients

3 medium
zucchini, sliced 1/4 inch thick
5 - 6 slice
bacon, diced
1 medium
onion, chopped
2 clove
garlic, chopped
1 tsp
each, salt, pepper and italian seasoning
3 slice
bread, cubed
4 oz
cheddar cheese, shredded
1 - 15 oz
tomato sauce
Shredded
mozzarella cheese for top

Step-By-Step

1In a Dutch oven, cover zucchini slices with water and bring to a boil, cook 5 minutes or until just tender. Drain well.

2In a small skillet, brown bacon with onions and garlic.

3Preheat oven to 350 degree F.

In a large bowl, add drained zucchini, sauce, seasoning, bacon mixture, bread cubes, cheddar cheese, carefully toss until blended.

Spread into a medium, greased casserole dish. Top generously with mozzarella cheese.

4Bake for 35 - 40 minutes or until bubbly and cheese is melted.
