Zucchini Chips

In yet another attempt to foster a love for vegetables in my child, I came up with a quick way to make zucchini more kid-friendly. It's a bit like breaded/fried zucchini but without the oil and just enough breading to add some crunch. Next time I plan to add a little grated parmesan cheese.

Ingredients

2 medium
zucchinis or yellow squashes
1
egg
1/2 c
bread crumbs, dry
1 tsp
italian seasoning
salt & pepper to taste

Step-By-Step

1Preheat oven broiler.

2Wash and slice zucchini into 1/4" rounds and place onto greased baking sheet.

3Lightly beat egg in a small bowl and use a basting brush to coat slices with egg wash.

4Sprinkle bread crumbs over zucchini.

5Season with Italian seasoning, salt & pepper to taste.

6Broil for 5-7 minutes, then turn zucchini and broil for another 5-7 minutes. Zucchini should be tender. Serve this hot!
