ZUCCHINI AND TOMATO STIR FRY

This quick simple and easy side dish came about as a result of what fresh veggies I had in the fridge. I didn't want them to spoil so I washed and cut them up together added some sliced onions and added them to a hot skillet with EVOO.

They cook quickly and they are so tasty when combined together. My daughter Briana likes to add Feta or Gorgonzola crumbles to hers while the veggies are still hot. You will not believe how quickly these veggies are sauteed. Plus they are delicious. I have also added shredded carrots to them before, so what ever you have on hand @ the time. They are great.
