Ingredients For very veggie casserole

  • ½ c
    (about 12) triscuit crackers, crushed
  • 1 Tbsp
    butter, melted
  • 1 pkg
    (16 oz.) frozen mixed vegetables (broccoli, red pepper, and carrots or cauliflower), thawed and drained
  • 1 can
    (8 oz.) sliced water chestnuts, drained
  • ½ c
    sour cream
  • ½ c
    shredded mild cheddar cheese
  • 1/3 c
    chopped onions

How To Make very veggie casserole

  • 1
    Mix cracker crumbs and butter until completely blended.
  • 2
    Combine remaining ingredients in a 1-qt. casserole and top with remaining crumb mixture.

    Bake in a preheated 350º oven for 35-40 minutes or until heated.
  • 4
    Serve as a side dish with any meat of your choice.
