OK I know, this has no redeemable qualities, but my grandsons Mike and Dan give thumbs up on this one.
It does have veggies in it.

Ingredients

2 lb
sliced zuchinni
1 c
carrots, coarsely grated
1 large
onion, chopped
8 oz
package herb stuffing mix (pepperidge farm)
1/2 c
butter
1 c
condensed cream of chicken or cream of mushroom soup
1 c
sour cream
2 c
extra sharp cheddar cheese, grated, and divided

Step-By-Step

1Boil veggies 5 minutes and drain.
2Mix sour cream, soup and 1 cup cheddar cheese.
3Melt butter, stir in stuffing mix. Spread half on the bottom of a greased casserole.
4Spoon on veggie mix.
5Top with rest of stuffing mix, then cheese.
6Bake 30 to 40 minutes in a pre heated 350 degree oven until bubbly ans starting to brown
