This was a dish my Memaw made when I was a child. She would cook a ham, and we would have ham sandwiches with this as a side. Very good and not heavy on the stomach.

Ingredients For vegetable spaghetti/summer spaghetti

  • 1 box
    thin spaghetti
  • 1-2
    green and red bell pepper - chopped
  • 1
    onion - chopped
  • butter, salt and pepper

How To Make vegetable spaghetti/summer spaghetti

    Cook spaghetti according to package, al dente In saute pan, melt butter and saute bell peppers and onions. Mix together spaghetti, onions, and peppers in pot and add water. Flavor with salt and pepper to taste. Let cook on medium heat for about 30 mins or longer to marry flavors. Eat as a side dish or just a nice bowl for a light summer lunch.

    ** For something different, instead of heating, after all is cooked, combine onions, peppers, and spaghetti in bowl and Zesty Italian dressing. Very good!
