    green bell pepper
  • 1
    red bell pepper
  • 1
    orange bell pepper
  • 2
    zucchinis (7 to 9 inches long)
  • 2 clove
    garlic, minced
  • 4 Tbsp
    olive oil, extra virgin
  • salt and freshly ground black pepper

How To Make three roast peppers with zucchini

    Preheat oven to 375 degrees. Slice bell peppers into 1/2 inch strips. Combine all vegetables in a large bowl. Add olive oil and toss to coat peppers. Sprinkle garlic powder, salt and pepper and toss again. Pour vegetable mixture into a glass baking dish and bake for 25 minutes or until zucchini turns yellow and vegetables soften to desired tenderness.
