this is what my aunt Lois cooks when we go to the country and visit with them i love to go and ride horses

Ingredients

1 1/2 c
olive oil, extra virgin
2 c
red onion, finely diced
3 Tbsp
fresh garlic, minced
2 c
eggplant, finely diced
2 c
zucchini, finely diced
2 c
yellow squash, finely diced
3 Tbsp
tomato paste
2 Tbsp
fresh oregano, chopped

Step-By-Step

1in a large pot or dutch oven heat olive oil over medium high heat.
2lightly saute the onions with the garlic and as the garlic turns golden add the eggplant, zucchini and yellow squash.
3saute for 5 minutes, then stir in tomato paste.
4reduce heat to low, stir in oregano and let simmer uncovered for 30 minutes, stirring occasionally.
5note: can use excess oil as a sauce with meat or fish to accompany the dish and that since its packed with flavor you should be using bread to soak it up.
