Ingredients

1 can(s) black eyed peas, rinsed and drained
1 can(s) black beans, rinsed and drained
1 can(s) white corn, rinsed and drained, you can use fresh corn if you wish
1 jar(s) small jar pimentos drained
1 c chopped celery
1/2 c vinegar
1/2 c vegetable oil
1/2 c sugar
1 medium onion
1 pinch red pepper flakes to your liking

This is an exceptional tasting dish! I do not normally care for beans, but the taste of this is out of this world. Nice summer dish too!

Mix 1/2 cup vinegar with the sugar and vegetable oil. Heat to boil and pour over the vegetable mixture. Let sit over night in refrigerator.
