Another wonderful recipe from the late, great Mr. Food, Art Ginsburg. This is SO easy and savory. Makes a great side dish, or lunch or brunch.

Ingredients

1
9-inch frozen ready-to-bake pie shell, thawed (or 1 bottom pie crust from scratch)
3 Tbsp
butter
3 medium
sweet onions, thinly sliced
2
eggs
1 c
sour cream
1/8 tsp
dry mustard
1/2 tsp
salt
1/8 tsp
black pepper
1/8 tsp
paprika

Directions Step-By-Step

1
Bake the pie shell in a preheated 350-degree oven for 8 to 10 minutes, or until light golden; set aside.

Melt the butter in a medium skillet over high heat. Add the onions, saute 5 minutes. Reduce heat to medium-low, cover, and saute 2 to 4 more minutes, or until tender. Place onions in the pie shell.
3
In a medium bowl, mix together the eggs, sour cream, dry mustard, salt and pepper. Pour mixture over onions. Sprinkle with paprika.
4
Bake at 350 degrees for 40 to 45 minutes, or until sides and crust are golden and a toothpick inserted near the center comes out clean.
5
Cut into wedges and serve with a green salad and a fruit dish.
