Another wonderful recipe from the late, great Mr. Food, Art Ginsburg. This is SO easy and savory. Makes a great side dish, or lunch or brunch.

Ingredients

1
9-inch frozen ready-to-bake pie shell, thawed (or 1 bottom pie crust from scratch)
3 Tbsp
butter
3 medium
sweet onions, thinly sliced
2
eggs
1 c
sour cream
1/8 tsp
dry mustard
1/2 tsp
salt
1/8 tsp
black pepper
1/8 tsp
paprika

Step-By-Step

1Bake the pie shell in a preheated 350-degree oven for 8 to 10 minutes, or until light golden; set aside.
2Melt the butter in a medium skillet over high heat. Add the onions, saute 5 minutes. Reduce heat to medium-low, cover, and saute 2 to 4 more minutes, or until tender. Place onions in the pie shell.
3In a medium bowl, mix together the eggs, sour cream, dry mustard, salt and pepper. Pour mixture over onions. Sprinkle with paprika.
4Bake at 350 degrees for 40 to 45 minutes, or until sides and crust are golden and a toothpick inserted near the center comes out clean.
5Cut into wedges and serve with a green salad and a fruit dish.
