susan's Story

If your looking for a change from the original green bean casserole for Holidays and Sunday dinner this is it.

My Mom used to make this when we were having company for dinner and I made it when my boys were small.

Cheese is always a good way to get your kids to eat their veggies.

16 oz
california frozen vegetables, thawed and drained
1 can(s)
cream of mushroom soup
4 oz
swiss cheese, shredded
1/3 c
sour cream
1/4 tsp
1 jar(s)
pimento, chopped and drained (optional)
2 oz
french fried onions

Directions Step-By-Step

Combine vegetables and soup, 1/2 cup cheese, sour cream, pepper, pimento and 1/2 can of onions.
Pour into 1 quart casserole.
Bake covered at 350 degrees for 30 minutes.
Top with rest of cheese and onions and bake uncovered for 5 minutes.

Thanks for the new recipe, Susan! And thanks for posting to the Eat Your Vegetables group. I'm sure we'll all appreciate this one. Looks like it could be done with many different types of vegetables.

What type of vegetables are in your California mix?
