I had a taste for spinach so I came up with this recipe. My husband tried it & loved it. It's our favorite spinach recipe now.

Ingredients

2 Tbsp
butter
1 pkg
spinach, fresh
1/2 c
artichoke hearts, canned
1/2 c
cherry tomatoes
1/4
onion
1/2 c
roasted red peppers
8 oz
cream cheese, low-fat
1/4 c
honey
2 Tbsp
dijon mustard
5 clove
garlic
2 tsp
hot pepper sauce
1/2 tsp
salt and pepper

Step-By-Step

Step 1 Direction Photo

1Chop artichokes, tomatoes, roasted red bell peppers, & onion. After chopping, put in small bowl & set aside.

2Melt 2 Tbsp butter & saute spinach & choppeed veggies for 2 minutes. Add cream cheese, honey, dijon mustard, hot pepper sauce, & spices. Cook until cream cheese is melted & veggies are soft, about 8 minutes.

3Serve alone or as a side to any meat or fish entree.
