Sweet Potato Cranberry Casserole

I love sweet potatoes and yams. The flavor of the sweet and tart of the cranberries is perfect in this dish.

This is another recipe I obtained from a cookbook called "Savoring Cape Cod" offered by the Audubon in Wellfleet, MA

Ingredients

good sized sweet potatoes or yams, boiled, peeled, and cut in 3/4-inch slices
1
12 ounce package fresh cranberries
1 1/4 -1 1/2 cups sugar
1/2 c
pecan halves
1/4 c
orange juice
3/4 tsp
ground cinnamon
1/4 tsp
ground nutmeg

Directions Step-By-Step

Combine cranberries, sugar, pecan halves, orange juice and spices in a 2-quart casserole.
Bake at 375 degrees F for 30 minutes.

Stir potatoes into cranberry mixture and bake 15 minutes or until heated through.

Serves 8
