Rose Mary Mogan

I created this dish to prevent my cucumbers from spoiling. The name came to me after realizing, I had 3 carrots that I needed to use also. Then after grating instead of slicing them & blending them together, I realized it looked like Cole Slaw, hence the name. I was also grilling chicken on the grill, & realized it would make a great summer time side dish to go with the chunky potato salad I was also making.

This entire dish was made from ingredients I needed to use up, including the sour cream, needless to say it definitely did not disappoint my husband as he had several large servings.

2Cut into smaller cuts if desired to fit into tube of a food processor may grate by hand if you do not have a food processor.
