I am thinking about my Mom today and she served this all summer long when the cucumbers were plentiful. Very refreshing and cool in the summertime. Her mom made them this way also. When my Mom was young, everyone in the south served these all summer long. There was no written recipe so quantities are what I used when making them today. Use your best judgement according to your tastes. Note: cook time of 4 hours is actually chilling time.

Ingredients For summer cucumbers and onions in sour cream

  • 1/2 c
    sour cream
  • 3 Tbsp
    white vinegar
  • 1 Tbsp
    sugar
  • 2 tsp
    dried dill weed
  • salt and pepper to taste
  • 4 md
    cucumbers, peeled if desired and thinly sliced
  • 1 sm
    sweet onion, thinly sliced and separated into rings

How To Make summer cucumbers and onions in sour cream

    In a large bowl, whisk sour cream, vinegar, sugar, dill weed, and S&P until blended.

    Add cucumbers and onions; toss to coat.

    Refrigerate, covered, at least 4 hours. Use slotted spoon to serve. Note: Cucumbers will leak internal water and add liquid to your sour cream mixture.
