Stuffed Zucchini

My family has never been much for Zucchini until I came up this recipe.

It is very unique and you won't find it anywhere else, since it is my original.

Ingredients

1 medium
sweet onion
3 medium
carrots
4 medium
zucchini
1/2 c
shredded parmesan
2 c
bread stuffing mix
1
egg
1/2 tsp
tarragon, dried (you can add more but not too much, is not optional)
1 tsp
garlic salt
2 tsp
montreal steak seasonings

Step-By-Step

1Wash your zucchini and cut in half. Scoop out the middle leaving about 1/4 inch around the edges. See photograph.
2Rub with olive oil and sprinkle Montreal Steak Seasoning inside and out.
3Mix together carrots, onions and the middle parts of the zucchini.
4Add stuffing, cheese, egg and spices.
5Stuff the boats and bake in 400 degree oven for about 15 to 20 minutes. They should be a little toasty on top.
6These are a great vegetarian meal. Enjoy!
