I take a BIG sweet yellow onion, vidalia are the best when they are in season and I hollow out the very center. I mix cream cheese, chives and sharp cheddar cheese together and pipe it into the center. I rub them with EVOO and season with sea salt and lots of black pepper then I put them in foil and close it but make a tent and throw them on the grill for about 45 minutes. They come out caramelized, soft and oozing with that cheesy mixture. Just slices it and serve it along size your favorite grilled meat or whatever you'd like. Sometimes at the very end I open them up and add shrimp or crab meat. They are divine
