FREDA's Story

This is a Very Old Family recipe.
Its been in My Family for as Long as I can remember, over 85 yrs for Sure. My granny used to make a meal on this

Ingredients

STEWED TOMATOES & RICE SIDE DISH BY FREDA
1 lg
onion diced and chopped
1/2
chopped green bell pepper
1/2 C
chopped & diced celery
5 Tbs
cooking oil ( approx)
1 C
long grain, uncooked rice
2 C
water or chicken broth
1 tsp
garlic pdr or fresh garlic if desired
2 cans
(16oz) stewed tomatoes chopped
option: season with salt & pepper if desired

Directions Step-By-Step

Heat Oil on Med-High heat
Add: Onions, Bell Pepper, Celery, Garlic Saute only until slightly tender, But not cooked all the way.

Add: Rice and Saute with Vegies, only till Rice slightly changes its Color, Toss frequently, so as to not Burn.

Add: Water or Broth to rice Mixture.
Bring to Boil; Reduce Heat to Simmer, Cover
Cook for 25-30 Min. (DO NOT STIR) or cook till rice is Tender and Fluffy. Then, Fluff with Fork.

Heat Tomatoes to Hot, in sperate Pan or in Bowl in Microwave.

Serve STEWED Tomatoes over this Cooked Rice.

Enjoy this as a side Dish and addition to any meal.

Breaded Tomatoes the Old Fashioned Way By Freda

I Posted this after Seeing You all recall this recipe, being served as Kids . .. Me too, This was fom My grandmother's recipes.

I remember my mom using white bread. I was very little at the time and don't remember the process of her making it. I can ask one of my siblings if they remember how she made it. i'm sure it was very simple.

Thanks Debby and Freda. Yeah, it would be nice to have that recipe. I'm pretty sure there isn't many ingredients in it but I'm not sure how much tomatoes and how much bread. I think it was just regular white bread that my mom used because that's all I ever remember having around when I was a child. My mom has one sister that is still alive, maybe I should call her and see if she knows how to make it. If I find out I'll post it on here.

Yes I know the recipe Your Speaking of. . . Nancy. I recall having this in My childhood days also. I will have to think on it.
But, I think it was also Called Stewed Tomatoes, Not for Sure.
