I made this for lunch today using what I had in the fridge. It's been awhile since I made it.My Sister adds can tomato to this dish,personally,I don't like it with tomatoes. My brother adds water chestnuts to his,I like that,but didn't have any.Make it your own.You can use any cheese you like,I had Mozzarella to day so that's what I used,but Cheddar or Colby is good too. Thesauri approximate measurements use as much squash as you need then about half the amount of corn and enough butter to coat the vegetables.

Ingredients For squash casserole

  • 1 zucchini,sliced
  • 1 yellow squash,sliced
  • 2 patty pan squash,sliced
  • 1/2 onion,sliced
  • 1 c whole kernel corn
  • butter,melted
  • salt and pepper
  • garlic,minced
  • 2 c mozarella cheese,or your favorite

How To Make squash casserole

  • 1
    Place vegetables in a bowl,season with salt,pepper,garlic,pour butter and mix well.Spray baking dish with Pam,pour half of the vegetables in dish,cover with cheese,add remaining vegetables,cover with foil.Bake @ 350 deg. for 20 mins or until vegetables are tender.Uncover sprinkle cheese on top,place back in oven until cheese melts.
