Fresh from the garden vegetables makes this a fantastic side dish.

Ingredients

  • 4 medium yellow squash, grated
  • 1/2 teaspoon grated onion
  • 1 small red bell pepper, chopped
  • 1 small yellow bell pepper, chopped
  • 1 egg, beaten
  • 1/2 cup all-purpose flour
  • 1 package equal (or 1 tsp sugar)
  • salt and pepper to taste

How To Make squash cakes

  • Step 1
    Combine squash with onion, peppers and egg. Mix well. Add flour, Equal (or sugar), salt and pepper. Mix well
  • Step 2
    Mold into cakes. If squash seems too thin add more grated squash to get the right consistency. Place in a hot, nonstick pan. No grease is needed, let squash cakes brown on each side.
  • Step 3
    Serve immediately.
