Ingredients

2 c
spinach, fresh, chopped
2
eggs, lightly beaten
1 c
potatoes, shredded
1 c
swiss cheese, shredded
1/4 c
onion, shredded
1/4 c
heavy cream
salt/pepper to taste

Step-By-Step

1In a large bowl combine all the ingredients
2spray 2 cupcake pans with oil= 12 individual medallions
3cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.
4let cool and serve as a side, snack or breakfast.
