freshly ground nutmeg
Chop and stem spinach, chop onions, mince garlic.
Melt butter in large skillet over medium heat. Add olive oil, stir in onions and garlic. Cook about 2 minutes or until onions are translucent.
Add spinach and stir till warmed throughout and is beginning to wilt.
Add salt, pepper, nutmeg and cream. Bring to a boil then reduce heat and simmer till liquid is reduced by half.
Add pepper jack cheese, stir till cheese is melted. Serve immediately.
