Spicy Corn Casserole (for the crock pot)

Here is a great dish that can be a meatless meal or a side dish. Its spicy and has protein and veggies.

Ingredients

2 Tbsp
butter
1 large
onion, chopped
2
green bell peppers, chopped
1/4 c
flour
2 c
fresh or frozen corn
2 c
cooked long grain brown rice
1 can(s)
(14 1/2 ounce) low sodium diced tomatoes with liquid
2
hard boiled eggs, chopped
2 1/2 c
shredded low fat sharp cheddar cheese
2 Tbsp
worcestershire sauce
2 tsp
hot pepper sauce (or more to taste)
1/2 tsp
each salt and pepper

Directions Step-By-Step

In a large medium melt butter and then saute onion and bell pepper until tender. Stir in flour and when mixed remove from heat. Place this and all ingredients in crockpot. Mix.

Cover and cook on low for 2-3 hours. Check on casserole while cooking and add tomato juice to your liking if corn begins to become too dry.
