Ingredients For spice roasted cauliflower & artichokes

  • 1 head
    cauliflower, small florets
  • 1 lb
    artichoke hearts, canned, drained, cut into 1
  • olive oil, extra virgin
  • kosher salt
  • 1 Tbsp
    cumin seeds, toasted
  • 1/2 tsp
    cayenne pepper
  • chives, bunch, chopped, for sprinkling

How To Make spice roasted cauliflower & artichokes

    Preheat oven to 375 degrees F.

    In a large bowl, combine the cauliflower & artichokes; toss generously with olive oil & salt.

    In a small bowl, combine the cumin & cayenne & add to the vegetables. Toss well to thoroughly combine.

    Spread the vegetables on a baking sheet in one even layer - use 2 baking sheets if necessary. Roast 20 minutes, then stir the veggies so they have the chance to brown all over & rotate the pan to ensure even cooking. Roast another 20 minutes, then stir & rotate again.

    Roast the veggies for an additional 5 - 10 minutes or until they are brown tender & smell wonderful - almost like popcorn! If they aren't lovely & brown, let them continue to roast for another few minutes. Taste & adjust the seasoning, if necessary.

    Remove the veggies from the oven, sprinkle with chives & transfer to a serving dish. Serve immediately.
