Ingredients For spice roasted cauliflower & artichokes

1 headcauliflower, small florets

1 lbartichoke hearts, canned, drained, cut into 1

olive oil, extra virgin

kosher salt
-
1 Tbspcumin seeds, toasted

1/2 tspcayenne pepper
-
chives, bunch, chopped, for sprinkling
How To Make spice roasted cauliflower & artichokes

1Preheat oven to 375 degrees F.

2In a large bowl, combine the cauliflower & artichokes; toss generously with olive oil & salt.

3In a small bowl, combine the cumin & cayenne & add to the vegetables. Toss well to thoroughly combine.

4Spread the vegetables on a baking sheet in one even layer - use 2 baking sheets if necessary. Roast 20 minutes, then stir the veggies so they have the chance to brown all over & rotate the pan to ensure even cooking. Roast another 20 minutes, then stir & rotate again.

5Roast the veggies for an additional 5 - 10 minutes or until they are brown tender & smell wonderful - almost like popcorn! If they aren't lovely & brown, let them continue to roast for another few minutes. Taste & adjust the seasoning, if necessary.

6Remove the veggies from the oven, sprinkle with chives & transfer to a serving dish. Serve immediately.
