Spaghetti Squash with Olives & Pecorino

- 1 Squash small
- about 2 lbs
- 1/4 c
- olives, pitted
- 3 Tbsp
- grated pecorino romano cheese
- 2 Tbsp
- chopped parsley
- 1 1/2 Tbsp
- olive oil
- 2 tsp
- red wine vinegar
1microwave squash 15 to 20 min.or untel tender, cool
cut in half lengthwise; discard seeds. with fork, scrapw aquash lingthwise; place strands in med bowl.
2Mix in olives,cheese, parsley, vigegar & olive oil.
I put alittle more cheese & tomatoes on top and warmed another min. in microwave.
