Southwestern Rice

This is a nice side dish for just about anything! Good with ribs, chicken, chops- anywhere you want "something different & easy."

converted rice (uncooked)
1 can(s)
(16oz) black beans, rinsed & drained
1 can(s)
(8oz) corn, drained
1 pkg
(1oz) ranch dressing mix
3/4 c
diced monterey jack cheese
1/2 c
seeded diced tomatoes
1/4 c
sliced green onions

Directions Step-By-Step

Cook rice according to package directions-omitting salt. During last 5 minutes of cook time, quickly remove lid and add beans and corn;replace lid immediately. When rice is done, remove saucepan from heat.
Add ranch dressing mix and stir. Let stand 5 minutes.
Stir in cheese, tomatoes and green onions.
Serve immediately.
