Ingredients

4 slice
thinly sliced cucumbers
1 large
sliced red onion
1 large
sliced bell pepper
1 Tbsp
salt
2 c
white vinegar
1 1/2 c
sugar
1 1/8 tsp
celery flakes
1 tsp
red pepper flakes
1/8 tsp
black pepper

Step-By-Step

1Mix cucumbers, onion, pepper, salt and set aside.
2Put vinegar, sugar, celery flakes and pepper flakes in a pot and bring to a boil. Remove from heat and add 2 handfuls of ice until melted.
3Place all veggies in a large 2 quart or 1/2 gallon canning jar. Pour mixture over cucumbers and store in refrigerator for up to 2 months.
