Simply Good Relish Salad

I have made this relish salad for many years. It is tasty and very versatile - it can be used as a side dish, as a relish along side plain meats, I have even added it to tacos!

I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish.

pinch tips: How to Wash Fruits & Vegetables

tomato, chopped
1/2 c
red bell pepper, chopped
1/2 c
green bell pepper, chopped
1 small
jalapeno pepper, seeded and finely minced (optional)
1/2 c
radishes, thinly sliced (or chopped red onion)
1/2 c
cucumber, pared and chopped
1 and 1/2 Tbsp
lemon juice
3 tsp
olive oil
salt and pepper to taste
2 Tbsp
chopped fresh parsley

Directions Step-By-Step

In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.
Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
