I’ve done this with fresh green beans as well, and it’s equally delicious.
Clean 1 pound of fresh green beans. Bring a pot of water to a boil, salt the water and blanch them for about 30 seconds to 1 minute. Remove them and put them in a bowl of ice water to stop the cooking. Drain them and mix with the mustard. And sauté them for about 2 to 3 minutes. Season with salt and pepper.
