It is very important to use shoepeg corn (sweet, white, small kernel corn)...it really makes a difference. You can use green chilies if jalapenoes are to hot for your taste...but try it first with jalapeno - the flavor is great.

Ingredients For shoepeg corn casserole

  • 2 - 12 oz can
    shoepeg corn, drained
  • 2-3
    jalapenoes - seeded and chopped (depending on how hot you want)
  • 8 oz
    softened cream cheese
  • 1 stick
    butter
  • 1/4 c
    sweet milk
  • 1/2 tsp
    garlic salt

How To Make shoepeg corn casserole

  • 1
    Melt butter, cream cheese, milk, and garlic salt. Bring to a boil to make a sauce.

    Add drained corn and jalapenoes. Mix

    Put in 2 quart buttered dish. Bake 30 minutes in 350 degree oven. Double recipe for a 9x13 pan.
