Shaved Asparagus with Parmesan Dressing

- fresh large asparagus
- 1 c
- parmigiano-reggiano , coarsely grated (3oz)
- 3 Tbsp
- fresh lemon juice
- 2 Tbsp
- water, warm
- 1/4 c
- olive oil, extra virgin
- sea salt & pepper
1Using a vegetable peeler , shave the raw asparagus into long thin strips , transfer to a bowl.
2In a small mixing bowl combine the cheese , lemon juice , water and oil until well blended.
3Add to the shaved asparagus and toss to coat evenly.
4Season with salt and pepper to taste ; serve at once.
