Two great cooks from our church back in NY would bring this vegetable dish to family dinners on Wednesday nights. I don't think the dishes ever went home with anything in them. What a great way to eat spinach when fresh wasn't in season, and we didn't have many fresh vegetables that were not in season in those days.

Ingredients

2 lb
cottage cheese, large curd
6 large
eggs
1 tsp
oregano, dried
1/2 tsp
kosher salt
1 stick
butter, sliced
2 box
frozen, chopped spinach, thawed and well drained
1 pkg
old english cheese slices, cut into small pieces

Directions Step-By-Step

Mix all ingredients together. Place in a greased casserole dish. bake at 350-degrees for 1 hour and 30 minutes.
