Ingredients For sausage stuffed mushrooms

  • 12 lg
    white mushrooms (about 3" wide) (see note)
  • 1/4 c
    lemon juice
  • 2 Tbsp
    olive oil, extra virgin
  • 1/2 lb
    turkey sausage, hot or mild. casings removed
  • 1 lg
    onion, finely chopped
  • 4 clove
    garlic, minced
  • 3 oz
    cream cheese, low-fat
  • 1/4 c
    parmesan cheese, fat-free
  • 3 Tbsp
    panko bread crumbs
  • 3 Tbsp
    parsley
  • 4
    scallions, chopped
  • 1/4 tsp
    salt & pepper

How To Make sausage stuffed mushrooms

    Preheat oven to 400 degrees F. Spray a large shallow baking dish with cooking spray.

    Remove the stems from the mushrooms & finely chop; set aside. Place mushroom caps in a large bowl & toss with lemon juice & 1 tbsp oil. Let stand for 10 minutes, tossing occasionally.

    Meanwhile, heat remaining oil in large nonstick skillet over medium high heat. Add sausage, onion, garlic & reserved stems. Cook, stirring & breaking up sausage, until sausage is browned & veggies are tender, about 10 minutes. Remove from heat, stir in cream cheese, parmesan, panko, parsley, scallions, salt & pepper.

    Spoon filling into caps & place into prepared dish. Lightly spray with cooking spray on top & bake until lightly brown, about 25 minutes.

    NOTE: Can also use Portobello mushrooms & just cut into 1/4ths.
