Ingredients For sausage stuffed mushrooms

12 lgwhite mushrooms (about 3" wide) (see note)

1/4 clemon juice
-
2 Tbspolive oil, extra virgin

1/2 lbturkey sausage, hot or mild. casings removed

1 lgonion, finely chopped
-
4 clovegarlic, minced
-
3 ozcream cheese, low-fat
-
1/4 cparmesan cheese, fat-free
-
3 Tbsppanko bread crumbs

3 Tbspparsley
-
4scallions, chopped
-
1/4 tspsalt & pepper
How To Make sausage stuffed mushrooms

1Preheat oven to 400 degrees F. Spray a large shallow baking dish with cooking spray.

2Remove the stems from the mushrooms & finely chop; set aside. Place mushroom caps in a large bowl & toss with lemon juice & 1 tbsp oil. Let stand for 10 minutes, tossing occasionally.

3Meanwhile, heat remaining oil in large nonstick skillet over medium high heat. Add sausage, onion, garlic & reserved stems. Cook, stirring & breaking up sausage, until sausage is browned & veggies are tender, about 10 minutes. Remove from heat, stir in cream cheese, parmesan, panko, parsley, scallions, salt & pepper.

4Spoon filling into caps & place into prepared dish. Lightly spray with cooking spray on top & bake until lightly brown, about 25 minutes.

5NOTE: Can also use Portobello mushrooms & just cut into 1/4ths.
