full romaine lettuce leaves
1 c
red pepper cut into thin short slices
1 c
cashew cheese (see recipe in previous post)
1 medium
cucumber cut into thin short slices
lemon zest - optional

Directions Step-By-Step

Dry off the romaine lettuce leaves with a paper towel. Cut the center vein out of the romain leaves which will leave you with 8 pieces. Spread about 2 tablespoons of the cashew cheese on the leaves. Add a pinch of sprouts and a few slices of freshly sliced red pepper and some cucumber. Roll the leaves up like a burrito and enjoy!
