3 ripe tomatoes or 12 plum tomatoes
freshly ground black pepper
halve plum tomatores lengthwise or quarter regular tomatoes, cores and seeds removed and arrange the tomatoes on a sheet pan, cut sides up, in a single layer.
Drizzle with Olive oil and balsamic vinegar. Sprinkle the minced garlic, sugar, salt and pepper over the tomatoes.
Roast at 450 degrees for approximately 15-25 minutes, until the tomatoes are concentrated and beginning to caramelize.
Serve warm or at room temperature
