Ingredients

  • 1 head cauliflower (about 2 lbs)
  • 1/4 cup + 2 tbsp olive oil, extra virgin, divided
  • 5 cloves garlic, minced
  • 8 slices bacon, cut into 1/2" pieces
  • 1 large onion, halved & cut into 1/2" thick slices
  • 2 teaspoons apple cider vinegar
  • salt & pepper, to taste
  • 3 scallions, thinly sliced

How To Make roasted cauliflower w/ bacon & scallions

  • Step 1
    Adjust oven rack to lowest potition & preheat oven to 475 degrees F. Trim the outer leaves of cauliflower & cut the stem flush with the bottom of the head. Cut into 8 equal wedges, keeping florets attached to the pieces of the core. Place wedges, cut side down, on parchment paper lined or silpat lined rimmed baking sheet.
  • Step 2
    Combine 2 tbsp oil & garlic in small bowl; set aside.
  • Step 3
    Add bacon pieces & onion slices, distributed around cauliflower on baking sheet. Drizzle oil/garlic mixture over everything.
  • Step 4
    Cover sheet tightly with foil & cook 10 minutes. Remove foil & continue to roast until bottoms of cauliflower wedges are golden, 15 minutes. Remove sheet from oven & flip everything over. Return sheet to oven & continue to roast until cauliflower is golden all over, another 15 minutes.
  • Step 5
    In a large bowl, combine 1/4 C oil & vinegar; whisk to combine.
  • Step 6
    Toss roasted cauliflower mixture in a large bowl with the oil/vinegar mixture. Season with salt & pepper. Transfer to a platter & sprinkle scallions over.
