10 oz boxes frozen chopped broccoli
fat-free cream of mushroom soup
shredded cheddar cheese, i used reduced-fat
mayonnaise, i used light
crushed ritz crackers, i used reduced-fat
Heat oven to 350. Lightly spray casserole dish w/ cooking spray. In a microwaveable bowl, microwave broccoli w/ about 1/4 cup water, until tender, but still has some crunch to it. Drain well.
In bowl, mix together broccoli, soup, cheese, onion, eggs, mayo, salt and pepper. Mix well. Spoon into casserole dish.
Sprinkle top of casserole w/ cracker crumbs. Drizzle w/ butter. Bake 45 mins or until bubbly. Can tent w/ foil if top is cooking to fast, but take the foil off the last 10 mins.
