Rice With Spinach Sweet Peppers & Parmesan

Ingredients
| 2 1/2 c | minute maid rice, cooked according to package directions |
| 2-3 | each mini sweet peppers, ( i used red, orange & yellow) chopped |
| 1 lg | onion, chopped |
| 3 clove | garlic, minced |
| 1 1/2 c | shredded parmesan cheese |
| 2 Tbsp | olive oil |
| 1 Tbsp | butter |
| 1 pkg | 9 oz. fresh baby spinach |
| salt & pepper to taste |

Directions
Add olive oil and butter to a large skillet. Heat over medium high heat. Cook Rice according to package directions, then set aside till needed.Chop and add sweet peppers, onions and minced garlic to skillet, then saute till transparent and tender.Add fresh baby spinach, and stir until the leaves begin to wilt.After spinach has wilted, add the cooked rice and shredded parmesan cheese, and stir to combine, then mix together till cheese begins to melt. Add an additional pat or two of butter if desired. Season with salt and pepper. Serve while still hot.I served this on an oval platter, and stuffed a heart shaped cookie cutter with the rice then carefully removed the mold to reveal the shaped rice side dish item along with my Beef Wellington for 6 with Burgundy Sauce, and Broccoli.

Thanks Diane it really was a perfect addition to our meal. Quick and easy after the time consuming Beef Wellington for 6 with Burgundy Wine Sauce It was very tasty, and we loved it.

Today I made this for lunch. Well, it's only 3:28 pm here but Husbandmine works tonight so I had to make it for lunch instead of supper. I put this with a baked chicken. It was light enough for lunch and still filling. I was able to send him with leftovers. Only because neighbors are at work, otherwise there wouldn't have been anything left.
This was so good!! It didn't take a lot of time and it was so fresh!! I love that I can make this into a fancy meal or just have a simple, relaxed evening with it. We had a candle lit lunch with sparkling apple cider in champagne glasses. We don't normally drink but I do love the glasses. We don't normally eat by candlelight either but it has been overcast rainy today so thought I would make it a bit fun.

Dawna, Thanks so much for your approval of this recipe. Dawna what a creative way to serve lunch. That was so nice, and serving one of my dishes was an even greater bonus. so happy that you loved it. Simple is always great, when you don't need to do a lot of work. and it still taste great.
