red cabbage with apricots and oranges

Usually I make red cabbage with apples and prunes, but I had neither, so I used what I had on hand: dried apricots and oranges. It turned out unexpectedly delicious. As I didn't measure the seasonings exactly (i.e. honey, vinegar, salt, pepper), measurements are just rough guidelines. We had this with oven baked sweet potatoes which was especially delicious.

Ingredients For red cabbage with apricots and oranges

  • 4 c
    red cabbage, shredded
  • 1 lg
    orange
  • 1/2 c
    dried apricots
  • 1 clove
    garlic
  • 1
    shallot
  • 2 Tbsp
    soy sauce
  • 1 tsp
    honey
  • 1 Tbsp
    coconut oil or olive oil
  • 1/4 c
    dry sherry
  • 1/4 c
    water
  • pepper, to taste
  • salt, to taste
  • 1 tsp
    balsamic vinegar
  • 1/2 tsp
    cardamoom
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
    allspice
  • 1/4 tsp
    cinnamon

How To Make red cabbage with apricots and oranges

    Finely chop shallot and mince garlic. Dice dried apricots. Then cut orange into fillets, set aside.

    In a pan large enough for 4 cups cabbage, heat oil and sauté shallot and onion until translucent, then add diced apricots and keep sautéing for another minute.

    Add cabbage, mix well, then add sherry. Let cook until alcohol has evaporated, the add soy sauce, vinegar, honey, spices and water, stir well, reduce heat and cover the pan.

    Let cook until cabbage has wilted, then add salt and pepper to taste, mix well, and add orange fillets. Cover again and let cook until cabbage is as done as you want it.
