This is a really good Tabouli and it is Vegan. Try is I think you will like this.

Ingredients

head cauliflower
1/2 c
parsley, chopped fine
1/2 c
red onion, diced fine
1/2 c
cherry tomatoes, finely diced
1 small
lemon, juiced
1/2 Tbsp
lemon, juiced
8 small
pods okra, sliced in rounds

Step-By-Step

1Cut the cauliflower in florets and process in 2 batches. Wash okra and pat dry cut into rounds.
2Pour cauliflower and okra into a large mixing bowl mix .
3Add all of the other ingredients into the bowl with the cauliflower and okra and mix thoroughly.
4When mixed, serve or store the tabouli in the fridge until your ready to serve.
