Lisa Pekala Recipe

Polish Vegetable Salad

By Lisa Pekala Drkaito

This authentic Polish salad is known all over Poland as a staple dish in every household. It is served cold as a side to almost any meal. It is great with burgers, hot dogs, Polish sausage or even schnitzel. I make this salad a couple times a month.

I don't normally eat salads with fruit in it. But this sounds so good. Is the apple an obvious flavor or does it blend in pretty well?

The apple does blend in extremely well and chances are you won't taste it. You can add very little or omit it even, if you'd like. I never used to eat salads with fruit in it either, until I went to Poland many years ago...then, I quickly changed my mind because they were so good. One of my favorites is one my Polish aunt makes with pineapple, pieces of ham, egg and corn. It's so delicious. One day I'll post that recipe too. Take care and thanks for writing! :)

So, I made this last night for lunch today. I had my parents out for Mother's Day. Anyway, it's pretty darn good. We enjoyed it. When I make this again, I am going to use a fresh carrot. The canned ones just did not add much flavor. Thanks for sharing and the apple is a nice addition, just perfect for me. Thanks!
