This is a recipe that my Mom made on every holiday. It just didn't seem right if this wasn't on the table. Of course, I love it any time. It only takes a few minutes to put it together but requires a couple of hours chilling time. It is worth it. I found photos on the internet since I have not taken my own pictures.

Ingredients For pea salad

  • 2 Tbsp
    celery, chopped
  • 1 Tbsp
    red onion, chopped
  • 2 Tbsp
    bell pepper, chopped, any color
  • 1 tsp
    pimiento, chopped
  • 1 Tbsp
    dill pickle relish
  • 1 c
    cheddar cheese, diced
  • 1 can
    (17 oz) english peas, drained
  • 2
    eggs, hard boiled and chopped
  • 2 Tbsp
    miracle whip salad dressing
  • 2 c
    shredded iceberg lettuce

How To Make pea salad

  • 1
    Combine first 6 ingredients and mix well.

    Add peas, eggs and mayonnaise and mix gently.

    Chill thoroughly (at least 2 hours).

    Just before serving, mix in lettuce. A little more Salad Dressing may be needed.
  • 5
    Garnish with sliced, hard-boiled egg and sprinkle with paprika.
