Ingredients

3 Tbsp
butter, unsalted
1/2 c
onion, diced
2 clove
garlic, minced
4 c
zucchini, shredded
1 1/2 tsp
salt
1/2 tsp
pepper, freshly ground
4 dash(es)
hot sauce
2 Tbsp
all-purpose flour
1 c
chicken broth
1 1/2 c
heavy cream
3/4 c
long-grain rice
3/4 c
parmesan cheese, grated

Step-By-Step

1Over medium heat, melt butter then saute onion and garlic cook until softened.
2Add zucchini and cook 6 minutes. Season with salt and pepper and hot sauce.
3Sprinkle with the flour and cook for 2 minutes.
4Preheat oven to 400. Spray a 13x9 baking dish with nonstick cooking spray. Stir rice into the zucchini mixture, pour into dish and sprinkle with cheese.
5Bake until cheese is golden about 30 minutes.
