Make it ahead of time. The longer it sets, the better it becomes. It can be easily doubled.

- 2 medium
- cucumbers, peeled and thin sliced
- 1/2 c
- rice vinegar
- 4 Tbsp
- sugar (more or less to taste)
- 1 tsp
- ginger root, 4-5 thin slices
1Place sliced cucumbers in a medium bowl. (If you have a larger cucumber, you may want to slice it in half lengthwise and remove the seeds, then slice thin)
2Mix together rice vinegar, sugar, salt and ginger root. Pour over sliced cucumbers.
3Note: Depending on the size of the cucumbers, you may have to increase the amount of dressing.
4Refrigerate at least 1 hour - longer is better - stir occasionally.
