OMG this cant be squash ! ( red kuri )

Made this up and I had never used Red Kuri squash before. It is simply amazing. If you like pumpkin this is for you! I cant keep enough of it around. Hope you enjoy it as much as my husband does!

Ingredients

1
red kuri winter squash
1/4 c
butter (do not subsitute)
to taste
cinnamon
to taste
salt
to taste
pepper
bit
evvo
1/4 c
splenda brown sugar
dash
nutmeg

Step-By-Step

1Cut red kuri in half,scoop out seeds.

2Rub inside with evvo and sprinkle with S & P.

3Place open side down on foil lined cookie sheet.

4Bake in Pre-heated oven @ 375 for 45-50 minutes. It will soften or collapse.

5Let cool until you can handle it. Then scoop out the golden delicious flesh and mash it like a potatoes.

6Add butter and the rest of the ingredients. Blend well. Taste....adjust to your taste !! Serve warm, taste like tour eating pumpkin pie !!
