    bacon, cut into bite size pieces

    onion, cut into bite size pieces
  • 1 pkg
    frozen cut okra
  • 14 1/2 oz
    can plain diced tomatoes, undrained
  • 20 oz
    package frozen sweet corn
  • salt and pepper to taste
  • 1 can
    mushroom stems and pieces, optional

    Fry bacon in a large skillet, over medium high heat, stirring constantly to prevent burning, about 5 minutes. Add onions and okra

    Cook, stirring constantly, until tender and lightly browned Pour in tomatoes, and simmer over medium heat for approximately 20 minutes, Continue gentle stirring

    Add corn to the mixture: (optional mushrooms); simmer another 10 minutes. Continue gentle stirring Season with salt and pepper, serve hot.
