This may serve more or less depending on how it's used. If used as a "dip" with chips it's serves a lot, if using as side dish it may serve 6.

Ingredients

3-4 c
cactus
1 medium
onion
3 medium
tomatoes
1 bunch
cilantro, fresh
4 medium
chile serranos or jalapeƱos
1 clove
garlic, minced
3 dash(es)
garlic salt

Step-By-Step

1In large non-stick skillet cook cactus with minced garlic and garlic salt. Let it cook in it's own juices. Once in a while mix cactus so they all cook until dry.
2While cactus is cooking, start cutting up onions, tomatoes, cilantro, and chilies to desired size, and set aside in med-large bowl.
3Once all veggies are cut up and cactus is dry, mix all ingredients together. This can be used as an appetizer served with chips, or it can be used as a side with some carne asada (bbq) yummy! Of course add or omit chilies according to your spicy preference :)
